5 of Our Favorite Ground Beef Recipes

 

 So... you have no idea what to make for dinner…

And you have great grass-fed beef in your freezer.

What do I do with it?

Ummm... How do I make dinner with it??

These are very good questions!

In this post, I want to share 5 FREE tried & true family favorites!! 

Ground Beef is sooo handy!! I'd hate to be without!! 

And it's so versatile!! You can fry it for casseroles/ salads, put it into loaves, balls or patties.... whatever you are hungry for!

Important!!   First step: Get 2 lbs. ground beef out of the freezer to thaw! 

(Somehow for me, that's always the hardest part... I easily get sidetracked during the day & forget about making dinner!😏)

My first recipe is one of my 10-yr.-old's favorites. Melissa is on the schedule to make dinner every Tuesday eve.

(An awesome Blessing! How do I have a daughter old enough for that already??!)

 

1.  Melissa's Cheesy Enchiladas

Cheese Sauce:   

1/2 c. butter      8oz. cream cheese

 3 c. raw milk    8oz. plain greek yogurt

In a 2 qt. saucepan, pour all ingredients, heat until cheese & butter has melted, stirring occasionally.  Set aside.

Meat Mixture:  2 lbs. grass-fed hamburger  

1 pkg. taco seasoning   1 med. onion, chopped

12 flour, taco-sized tortillas

Fry the hamburger with the chopped onion; stir in the taco seasoning.

Place the meat mixture onto the tortillas and roll up.

In a greased 9x13 casserole dish, pour 1 cup of cheese sauce. Spread out.

 Place rolled up enchiladas on top of the cheese sauce.

Pour remaining cheese sauce on top.

Sprinkle with 2 cups mozzarella cheese. 

Bake at 325° for 30 min. or until cheese starts to bubble.

Remove from oven and serve!

  Can serve with chopped lettuce, tomatoes, & salsa.  Yummy!

2. Taco Salad

Not much time?  Try this really quick & easy dinner!  I often serve it for a quick lunch also.  Especially with tomatoes in season right now.🥗

Ingredients:  

  • 2 lbs. ground beef, fried

  • 1 pkg taco seasoning   

  • 1 med. onion, chopped

  • 4 cups lettuce, chopped          

  • 3 tomatoes, chopped

  • 3 cups shredded mozzarella cheese

  • sour cream

  • 2 cups salsa (fresh is amazing!)

  • 2 jalapenos, chopped (optional)

  • corn chips or tortilla chips 

Fry ground beef with onion, add taco seasoning.  To serve, start with hamburger mixture and layer on your plate in the order given.

3. Super Easy Meatloaf

This is such an easy throw-together meat recipe!  And if there are any leftovers it makes great lunch sandwiches the next day! 

You could wrap some potatoes in tin foil and bake them along with this or warm up some green beans or throw together a quick salad and you have dinner!

Ingredients:

  • 2lbs. grass-fed ground beef

  • 1/4 c. chopped onion

  • 2 eggs

  • 1 c. raw milk

  • 1 c. rolled oats (uncooked)

  • 2 tsp. salt

  • 1/2 tsp. pepper

Sauce:

  • 2 Tbsp. mustard

  • 2/3 c. ketchup

  • 2 Tbsp. honey

 Mix together meatloaf ingredients. Pat into 2 large bread loaf pans.  Bake at 350° for 1 hour. Mix sauce ingred. together and pour over loaves. Bake 5 min. longer.  Slice & serve.

4. BBQ Meatballs

This is an all-time Borntrager favorite!

Ingredients:

  • 2 lbs. grass-fed ground beef

  • 1 cup raw milk

  • 2 eggs

  • 2 tsp. chili powder

  • 1/2 tsp.  pepper

  • 2 c. rolled oats

  • 1 med. onion, chopped

  • 1/2 tsp. garlic powder

Mix together all ingredients and shape into balls. A cookie scoop or ice-cream scoop is good for this step! Put balls into a 9x13 greased, casserole dish.  Pour your favorite bbq sauce over the meatballs; approx. 4 cups. Cover with tinfoil.  Bake at 325° for 1 hour.  Serve.  Delicious!!

5. Mouth-Watering Hamburgers

Hamburger sandwiches are always a win-win for our family!🍔

Tip: We also sell ready-made hamburger patties in our store!  I love these!!  Just partially thaw, throw on the skillet, sprinkle with seasonings & fry.  Easy enough my 7 & 10 yr old can do it!

 

  • In a medium bowl, take 2 lbs. of thawed ground beefadd 1 Tsp. real salt, 1/2 tsp. black pepper, & 1/2 tsp garlic powder. 

  •  Mix together.

  • Divide into 8 balls.

  •  After shaping into balls gently flatten out to 1/4" -1/2" thick patties.

  • Warm up a flat skillet on medium heat.

  • After melting 2 Tbsp. pork lard on skillet, place patties on the skillet. 

  • Fry approx 5 min. on one side, flip over & fry till done, approx 5-10 min.

Serve with buns, garlic-dill cheese🧀, lettuce, tomato, pickles,& onions.

Add a side of Honey Greek Yogurt or make a Kefir smoothie & you'll have a filling meal!
