Want to Invite guests for Easter Lunch?? Here's a simple plan!

Wanting to invite family for Easter??   But… it looks intimidating and… overwhelming?

As a mother of 5 young children… I can identify! 😉

I can Help!😃

I have compiled recipes just for YOU!

Easter is on Sunday (of course😍) and our family has this “rule”: We Always have meat ready in the slow cooker by the time we get home from church!  Did I mention we have young children?!😎

Here’s a simple plan:

On Thursday (or whichever day works for you this week):

Come to the farm store to get the following:

  • 1 gal. Borntrager  Dairy raw milk

  • 1 cont. Borntrager Dairy raw butter

  • 1 cont. Borntrager Dairy plain Greek yogurt

  • 2 pkgs. Borntrager Dairy Shredded Mozzarella Cheese (frozen)

  • 2 Borntrager Dairy Ham Roasts (thaw in your fridge for Saturday)

  • 3 cont. Honey & Vanilla Borntrager Dairy Greek Yogurt

  • 1 dozen Borntrager Dairy eggs

  • 1 small container Borntrager Dairy honey

On Friday:

Go to town for the rest of your ingredients

  • 5 lb. potatoes

  • 2 onions

  • Cocoa powder

  • Instant Coffee

  • Vanilla

  • 1 bag of flour

  • 1 bag dark chocolate chips

  • Salt & Pepper

  • Steak Seasoning (your fav)

  • Apple Cider Vinegar

  • Spinach

  • 1 cont. Strawberries

  • Poppy Seed Salad Dressing

  • 1 small bag Slivered Almonds

Mow the lawn

Plant those flowers you got last week😉 or grab an Easter Lily in town

On Saturday:

  • Put a ham or two (depending on your guest list) in the slow cooker Sat. evening.  

  • Sat. afternoon make my famous cheesy potato casserole (because we want ready-made ya know!)

  • Bake some mocha brownies or better yet, get your 8 yr. old to make them😍, meanwhile, you have time to sweep the house & clean the bathroom!

  • Be sure to grab some Honey & Vanilla Greek yogurt (heavenly with my mocha brownie recipe!) when you visit the farm-store!


On Sunday morning:

  1. Set Dining room table

  2. At 9:30, Turn oven to 300 degrees; Put potato casserole in.

After church:

  1. Throw together your salad.

  2. Place meat on serving platter & slice: (tip: drizzle with honey before serving!😋)

  3. Set potato casserole on table.

  4. Enjoy your guests!!

There you have it!! Easter lunch all figured out!🤗

Bonus: You can confidently sit in church & ENJOY celebrating our risen Saviour knowing lunch is ready!!!

Easter Lunch Recipes

For 10- 12 people

Mouth-Watering Ham Roasts

Ingredients:

2 -  3 - 4 lb ham roast

Raw butter softened

1 c water

1/2 c raw apple cider vinegar

Ham Rub:

2 Tbsp steak seasoning

1 Tbsp each - real salt, dried rosemary & dried thyme

Steps:

1. In a small bowl, mix the rub ingredients.

2. Rub roast with some raw butter on both sides and rub the seasoning on each side.

3. Heat a skillet over med-high heat and add a little butter, sear both sides of meat, about 5 min per side. Remove meat and place in a 6-quart crock pot.

4. Deglaze the skillet with the vinegar, scraping any bits that may be sticking. Pour this over the meat. Place lid on crockpot and cook on low for 12-15 hours.

5. After done cooking, place on a meat platter, slice, & drizzle with honey! Yummy!


Arlene’s Famous Creamy Potato Casserole

I’m often asked to bring this potato dish to family gatherings! :) Your guests are sure to love it!!

Ingredients:

  • 4 lb. potatoes, cooked, peeled, & grated or frozen hashbrowns

  • 4 Tbsp. Borntrager Dairy raw butter; softened

  • 1- 16oz. Borntrager Dairy Plain Greek Yogurt or cream cheese

  • 2 ½ cups Borntrager Dairy raw milk

  • 1 tsp. Salt

  • ¼ tsp. Pepper

  • ½ cup chopped onions

  • 1 lb. Borntrager Dairy cheese shredded

Steps:

  1. Mix butter, yogurt, milk, salt, & pepper in your blender.

  2. Place grated potatoes & chopped onions in a 9x13 baking dish.

  3. Pour sauce over potatoes & mix well.

  4. Sprinkle cheese over potato mixture.

  5. Cover with parchment paper, then a sheet of tin foil & place in the fridge.

  6. When ready to bake, place in preheated 300-degree oven. Keep covered while baking. Bake for 3-4 hours or till hot.


Strawberry Spinach Salad

So simple AND yummy!

Ingredients:

  • 16 oz. fresh spinach, rinsed & torn into small pieces

  • ½ cup slivered almonds

  • 1 qt. fresh strawberries, cleaned, hulled, & sliced

  • 1 lb. Borntrager Dairy cheese, Shredded

  • 1 bottle poppy seed dressing

Steps:

  1. Toss spinach, almonds, strawberries, & cheese in a pretty salad bowl.

  2. Pour poppy seed dressing overall & mix.

  3. Serve immediately.


Mocha Brownies

Heavenly! Serve with Borntrager Dairy’s Honey & Vanilla Greek Yogurt & you’ll have the perfect dessert!!

Ingredients:

  • 1 cup Borntrager Dairy’s raw butter; softened

  • 1 cup raw honey or 2 cups sugar

  • 1 cup cocoa powder

  • 2 Tbsp. Instant coffee

  • 2 Tbsp. hot water

  • 2 tsp. Vanilla

  • 4 Borntrager Dairy’s pastured eggs

  • 1 cup flour

  • ½ tsp. Salt

  • 1 ½ dark chocolate chips

Steps:

  1. Preheat oven to 325-degrees.

  2. Dissolve coffee in hot water.

  3. In mixer, cream together butter & honey.

  4. Add cocoa, vanilla, eggs, & coffee mixture. Blend well.

  5. Add flour & salt.  Mix well.

  6. Grease a 9x13in baking pan.

  7. Pour mixture evenly in pan.

  8. Sprinkle chocolate chips overall.

  9. Bake for 12- 15 min. Or until an inserted toothpick comes out clean. DO NOT OVERBAKE!

  10. Cool.
