“What is your favorite meal of the day?” a friend asked my husband.

 

I eagerly waited for the answer. 

 

I’m always looking for ways to make my husband’s day better.  😍
 

Listening to his likes & dislikes in conversations with others is one way I’ve found is an easy way to grab some new ideas! 😉

 

I know... I could ask him, but he doesn’t say anything negative about any of my cooking so this is a great way to learn! 

 

His answer: 

“Breakfast,” was his immediate response.

 

“Hmm, really?” I thought to myself. “I would not have guessed that.”

 

“What's best about breakfast?” asked our friend.

 

“There’s nothing like a home cooked meal after getting all the animals fed & the cows milked.

And sausage.

Sausage & bacon make any breakfast amazing,”
my husband immediately answered.


He didn’t even have to think it through, he knew this was his favorite meal. 

 

Yep.

You guessed it.

Breakfast has become a lot more important in my mind since that conversation.

Here is a breakfast sausage recipe you need to try!

My husband thought them fantastic & could hardly stop eating them.

Sausage & Egg Breakfast Muffins
                                               

  Yields: 24 muffins 

  • 1 lb. German Sausage Borntrager Dairy                                  

  • 24 pastured eggs Borntrager Dairy

  • 1 medium onion; chopped

  • 1 medium bell pepper; diced

  • 1 tsp. salt

  • 1/2 tsp. garlic powder

  • 1/2 tsp. black pepper

  • 1 1/2 cups cheddar cheese; shredded Borntrager Dairy



Instructions:

  1. Preheat your oven to 350 degrees.

  2. In a large skillet, cook the sausage until fully cooked through. Drain & set aside.

  3. In a large bowl, whisk together the eggs, Add the onion, pepper, spices, cooked sausage, and 1 cup of cheese.

  4. Grease two 12-cup muffin tins heavily with pork lard (Borntrager Dairy). Place 1/3 cup of the mixture into the muffin cups. Top with remaining cheese and bake for 20-25 minutes or until the muffins are set.

      5. Enjoy salsa.

Any leftovers can be refrigerated & reheated the next day or frozen & reheated.


Here’s a favorite casserole our family enjoys!



Cheesy Sausage & Egg Breakfast Casserole

Ingredients:

  • 1 lb. German Sausage Borntrager Dairy

  • 12 large Pastured Eggs Borntrager Dairy

  • 1/2 cup Heavy Cream Borntrager Dairy

  • 2 cups Cheddar Cheese; divided Borntrager Dairy

  • 2 Tbsp. Parsley,

  • chopped 3 cloves Garlic; minced

  • 1/4 tsp. sea salt

  • 1/4 tsp. Black Pepper

  • 3 cups broccoli (optional)

  • 2 Tbsp. Pork Lard Borntrager Dairy


Instructions:

  1. In a skillet, heat pork lard over medium-high heat, cook the minced garlic for about one minute.

  2. Add the breakfast sausage.

  3. Cook for 10 minutes, breaking apart with a spatula until browned.

  4. Preheat the oven to 350 degrees.

  5. If using broccoli (or other veggies), blanch them in boiling water for about

    5-7 minutes, until crisp-tender.

  6. Then plunge into an ice bath to stop cooking, drain & pat dry.

  7. In a large bowl, whisk together the eggs, heavy cream, half of the cheddar cheese, parsley, sea salt, and black pepper.

  8. Grease the bottom of a glass 9x13 casserole dish.

  9. Place the crumbled sausage evenly in the casserole dish.

  10. Optional: Layer any precooked veggies at this point.

  11. Pour the egg mixture over the sausage.

  12. Sprinkle the remaining cheddar cheese on top.

  13. Bake for approximately 30 minutes, until the eggs are set and the cheese is melted. Serve.

Delicious Pancakes with a side of Sausage Links

Ingredients:

  • 2 cups whole wheat flour (we prefer Praire Gold)

  • 1/8 cup raw honey Borntrager Dairy

  • 3 1/2 tsp. baking powder

  • 1 1/2 cups raw milk Borntrager Dairy

  • 1/2 cup soft raw butter Borntrager Dairy

  • 1 tsp. Arlene’s Pure vanilla

  • 2 eggs Borntrager Dairy

  • Sausage links from Borntrager Dairy


Instructions:

  1. Turn your electric skillet on med-high.

  2. In a bowl, combine the first 3 ingred.

  3. In another small bowl, lightly beat the eggs and add the milk, butter, and vanilla.

  4. Pour the liquid into the dry ingredients, and mix well.

  5. You're ready to make your pancakes!

  6. Ladle your pancake mix onto the hot griddle.

  7. Flip. Cook until done. Serve with Maple Syrup.


Grill or fry your sausage links on med. high heat for approx. 15 min. or until done.


Cheesy Sausage Balls

Ingredients:

  • 1 lb. German Sausage Borntrager Dairy

  • 2 cups Cheddar Cheese; grated Borntrager Dairy

  • 3 Tbsp. Butter; melted Borntrager Dairy

  • 1/2 large yellow onion; grated

  • 1/2 tsp. sea salt

  • 1/4 tsp. Black Pepper

  • 1 1/4 cups flour

  • 1 1/2 tsp. baking powder

  • 1/2 tsp. cayenne pepper (optional)


Instructions:

  1. Preheat oven to 400 degrees.

  2. In a large bowl, whisk together flour, salt, pepper, cayenne pepper, and baking powder.

  3. Add cheddar cheese and toss to coat.

  4. Add sausage, onion, and butter.

  5. With your hands, mix until well combined and roll the mixture into 1-inch balls.

  6. Place balls, 1/2 in. apart, on a parchment-lined baking sheet.

  7. Bake until balls are golden and cooked through, approx. 25 minutes.

  8. Serve warm.
